Zeylanicum cinnamon, often referred to as true cinnamon, is far less common and has long been prized for its delicate flavour. Harvested from the inner bark of the Cinnamomum verum tree, it is noticeably lighter—tan to golden brown—and forms thin, fragile quills made up of many soft layers. These qualities give it a refined texture and a more nuanced, aromatic profile. Correspondingly, it is more expensive than cassia.
