ZA'ATAR FLATBREAD
Ingredients (makes 6 flatbreads)
Dough

2 cups plain (all-purpose) flour
-
2 tsp baking powder
-
½ tsp salt
-
¾ cup plain yoghurt (Greek or natural)

2 tbsp olive oil
Za’atar Topping
-
¼ cup middle eastern za’atar spice blend
-
3–4 tbsp extra virgin olive oil
Method
1. Make the dough
-
In a bowl, mix flour, baking powder, and salt.

Add yoghurt and olive oil.

Mix until a soft dough forms, then knead lightly for 1–2 minutes.

Cover and rest for 10 minutes (important for softness).
2. Prepare the topping
-
Mix za’atar with olive oil to form a loose paste.
3. Shape the flatbreads
-
Divide dough into 6 balls.
-
Roll each into a thin round (about 12–15 cm).

Press dimples into the surface.
Cooking options
Pan-cooked (best for speed)
-
Heat a dry cast-iron or heavy pan over medium heat.

Place flatbread in pan, za’atar side up.
-
Cook 2–3 minutes until bubbles form underneath.

Flip and cook 1–2 minutes more until lightly charred and cooked through.
Oven-baked
-
Preheat oven to 220°C.

Place flatbreads on a lined tray.
-
Bake for 8–10 minutes until lightly golden.
To serve
-
Drizzle with olive oil
-
Serve warm with labneh, hummus, olive oil, cucumber, or tomatoes
-
Great for wraps or tearing and dipping
