CREAMY BUTTERMILK RANCH STYLE DRESSING
Here's an inspired version of Donna Hay's creamy buttermilk ranch style dressing, with the addition of Fleur de Sel for a delicate finish.
Makes: Approximately 1 cup
Ingredients
-
½ cup (125ml) buttermilk
-
½ cup (120g) whole-egg mayonnaise
-
1 tbsp Dijon mustard
-
1 tbsp lemon juice
-
1 small garlic clove, finely grated
-
1 tsp honey (optional, to balance the acidity)
-
½ tsp Fleur de Sel, plus extra to taste
-
Freshly cracked black pepper
-
1 tbsp finely chopped chives
-
1 tbsp finely chopped flat-leaf parsley
- Can opt for fresh dill instead
Method
-
Whisk together the buttermilk, mayonnaise, Dijon mustard, lemon juice and garlic until smooth.
-
Stir in the honey (if using), Fleur de Sel, black pepper, chives and parsley.
-
Taste and adjust the seasoning with additional Fleur de Sel, pepper or lemon juice if needed.
-
Refrigerate for at least 30 minutes before serving to allow the flavours to develop.
Serving Suggestions
This dressing is delicious over:
-
Cos, butter or iceberg lettuce
-
Baby gem lettuce with avocado and cucumber
-
Roasted potatoes
-
Grilled chicken salad
-
Crispy bacon and boiled eggs
-
Fresh tomatoes and radishes
The Fleur de Sel adds a delicate crunch and bursts of clean salinity, so it's best stirred in just before serving rather than too far in advance.
